Shahi Gosht Korma

Ingredients to make Shahi Gosht Korma

  • 600 grams- mutton
  • ghee- 4 tablespoons
  • cumin seeds- 1 tsp
  • ginger garlic paste- 2 tsp
  • onion paste- (grind 3 medium onions)
  • Kashmiri chilli powder- 4 tsp
  • garam masala powder- 3 tsp
  • tomato puree from 3 medium ripe tomatoes
  • Almonds- 15 (roasted in ghee till golden brown)
  • Cashews- 15 (roasted in ghee till golden brown)
  • salt to taste

How to make Shahi Gosht Korma

  1. Heat ghee in a handi – add cumin seeds and sauté for a minute – then add onion paste and fry till dark brown in colour on medium heat (keep stirring continuously to ensure even browning).
  2. Then add ginger garlic paste and stir for a couple of minutes.
  3. Add Kashmiri Chili powder, Garam Masala Powder and salt and stir – add some water to avoid burning of spices – stir for a while till water evaporates.
  4. Add mutton and Bhunno on medium heat till it leaves oil - now add tomato puree and mix well. Cook covered on low heat till meat is almost tender.
  5. Make a paste of roasted cashews and almonds and add it to the meat and cook for another 6-7 minutes on low heat.
  6. Adjust seasoning and add a couple of tablespoons of ghee from the top, cover for a couple of minutes. Serve hot.
