Bhapa Doi

Ingredients to make Bhapa Doi

  • 400 ml of condensed milk
  • 200 ml milk
  • 200 ml curd thick or hung curd
  • sugar 3 tbsp
  • water - 4 tbsp
  • raisins - 10

How to make Bhapa Doi

  1. Beat the curd until smooth and no lumps. I run it in the processor once.
  2. Now to this curd, add in the condensed milk and milk and beat well. Toast some raisins and add them into this and mix.
  3. Put it in a small bowl and cover with a foil tightly. Now put this bowl in a pressure cooker with water and steam it (without the whistle on the cooker) for around 30 minutes.
  4. You can use a steamer too if you have one. Once steamed cool it well and refrigerate until set. Demould it and pour the caramel sauce around and serve.
  5. For the caramel sauce - Take a pan and put in 2 tbsp of sugar and 2 tbsp of water and boil until it forms a single thread consistency.
  6. Leave it to cool a bit and pour it around the delicacy.

My Tip:

You can add any fruit puree along with it for an extra flavour and colour.
