Egg khichdi

Ingredients to make Egg khichdi

  • Basmati rice 1 cup
  • Mixed dal / lentils 1 1/2 cups
  • potato 1 cubed
  • French beans 7_8 cut in 1/2 inch long pieces
  • carrot 1 cut in cubes
  • tomato chopped 1
  • turmeric powder 1/2 tsp
  • coriander powder 1 tsp
  • cumin powder 1 tsp
  • chilli powder 1tsp
  • Garam masala powder 1/2 tsp
  • ghee 1 tsp
  • oil
  • salt
  • sugar a pinch
  • bay leaf 2
  • cardamom 3
  • cinnamon 1 inch
  • Whole jeera 1 tsp
  • Dry Red chilli 1
  • clove 2
  • egg 3
  • raisins 1 tsp
  • peanuts 1 tsp

How to make Egg khichdi

  1. roast peanuts and raisins
  2. Wash and cut all the vegetables
  3. Make scrambled eggs with sakt and turmeric powder
  4. Wash and soak rice and dals for an hour
  5. Drain water , dry in a colander for 15 mins
  6. Heat oil
  7. Add dry red chilli
  8. Add bay leaves
  9. Now add cumin seeds , cardamom and cinnamon
  10. Saute for some time
  11. Add all the vegetables
  12. Add turmeric , salt
  13. Saute for some time
  14. Cover it and cook for some time
  15. Now add cumin powder , coriander powder and chilli powder
  16. Saute for 2_3 mins
  17. Add rice and dal
  18. Fry for 3_4 mins
  19. Add 4 1/2 cups of water
  20. Add salt
  21. Cover and cook until rice and dal are cooked properly
  22. Add tomato pieces
  23. Again cover cook for 5_6 mins
  24. Add peanuts and raisins
  25. You can add whisked yoghurt too at this stage
  26. Mix everything properly
  27. Now add scrambled eggs
  28. Add ghee and garam masala
  29. Switch off gas
  30. Serve hot
