Stuffed Aloo Kulche

Ingredients to make Stuffed Aloo Kulche

  • 3 cups - flour
  • 1 tbsp - oil
  • 1/3 tsp - baking soda
  • A pinch of baking powder
  • Yogurt to knead the flour
  • Salt to taste
  • For the filling:
  • 3 - potatoes boiled and mashed
  • 2 tbsp - chopped green coriander
  • 1 tsp - chopped green chillies
  • 1/2 tsp - chaat masala
  • Salt to taste
  • For garnishing :
  • Chopped coriander leaves
  • Nigella seeds/kalonji as required

How to make Stuffed Aloo Kulche

  1. Mix together flour, salt, baking powder and baking soda. Add oil and mix well. Knead with yogurt. Cover with clingfilm and rest for 2 hours.
  2. Mix together mashed boiled potatoes, green chillies, green coriander, chaat masala and salt.
  3. Heat the tava. Make balls of the dough and roll. Place potato filling in the middle. Pat it down and slowly roll out the kulchas.
  4. Sprinkle some chopped coriander and Nigella seeds on top and press down well so that they don’t fall off. Put on a tava.
  5. Roast both sides. Add some oil and fry till evenly browned.
