ABOUT Foloi maacher muthaya( bronze feather back) RECIPE

This is basicaly preparation of Bangladesh. Basic requirement of this dish is the flesh of the fish should be sticky for binaing togather. It is prepared from ' chital ' maach( clown knife fish). As this variety is not availavble in hyderabad, i prepared from foloi fish ( Bronze feather bsck ).

Ingredients Serving: 6

  1. Fish meat ( flesh) - 1cup
  2. Boiled smeah potato - 1/ 2 cup
  3. Ginger Paste - 1 tsp
  4. Salt - 1/2 tsp
  5. Turmeric pwd- 1/2 tsp
  6. For gravy
  7. Dice potato - 1 nos
  8. Tomato chopped- 1 cup
  9. Cumin pwd - 1 tsp
  10. Red chilly pwd- 1tsp
  11. Home made garam masala pwd- 1tsp
  12. Turmeric pwd - 1tsp
  13. Coriander pwd - 1 1/2 tsp
  14. Whole cumin- 1/2 tsp
  15. Bay leaf - 1no
  16. Whole red chilly - 2nos
  17. Mustard oil - 1 /4 cup

Instructions

  1. Take out two slabs from the central bone by a knife. Scoop out the flesh.
  2. Mix with boiled smashed potato, salt, ginger paste and chilly pwd.
  3. Make shape with palm impression as shown in the pic.
  4. Steam the muthaya for 10 minutes.
  5. Take out from water and deep fry in mustard oil and keep aside.
  6. In same oil fry the diced potato and keep a side.
  7. Add whole red chilly , bay leaf and cumin seeds.
  8. Followed by chopped tomato and all masalas except garam masala.
  9. Stir for a while and add potato and fish muthaya.
  10. Add water after 2 minutes and continue cook for another 5 minutes.
  11. Add garam masala and chopped coriander leaves.
  12. Dish is ready to serve with steamed rice.
