Aloo & Capsicum

Ingredients to make Aloo & Capsicum

  • 500 gm - potatoes
  • 1 onion chopped
  • 3 tsp garlic paste
  • 2 - green capsicum chopped into cubes
  • 5 - 6 - pepper crushed into powder
  • 3tbsp virgin olive oil
  • 3 - 4 tsp - oregano powder
  • 2 tsp - amchur powder
  • 1 tsp cumin seeds
  • 1 cube cheese ( optional)
  • Few strands of fresh coriander leaves finely chopped
  • Salt to taste

How to make Aloo & Capsicum

  1. Boil the potatoes and cut into cubes. Wash and cut the capsicum into cubes. Cover and keep aside.
  2. Heat olive oil in a thick bottom vessels, pan or wok. Add cumin seeds and when it crackles, saute garlic paste.
  3. Add chopped onion and saute for a minute. Add capsicum and glaze for a while.
  4. Add boiled and cubed potatoes. Adding oregano mix well. Now Add pepper powder.
  5. Add amchur powder and salt.Mix everything well on high flame for 2 minutes .
  6. Grate cheese cube on it and let it melt in heat. Removing from flame garnish with finely chopped coriander leaves.

My Tip:

Can red, green,yellow bell peppers. All finely cubed. Can add chilly flakes if want aloo to be hot and spicy. Also one green chilly can be used to decorate. Can be served with potatoe wafers.
