Ingredients to make French macarons

  • For macarons
  • 60 gms almond meal
  • 115 gms icing sugar
  • 70 gms egg whites(2 egg whites)
  • 30 gms caster sugar
  • For Filling
  • 100gms butter
  • 100gms icing sugar
  • 250 gms cream cheese
  • Few pieces of strawberries

How to make French macarons

  1. For macaron preparation
  2. Give a pulse to ur almond meal and icing sugar in mixer and sift the flour
  3. Whip ur egg whites to soft peaks add powdered sugar and whip until stif peaks are formed
  4. Add ur almond mixture to whipoed egg whites and in a j motion mix ur egg whites and almond meal u can keep a count uoto 30 times (if ur a beginner mixture should be smooth and very viscous not runny or not thick
  5. If u over mix and the batter turns runny u will not get foot on macarons ,if u under mix it u will have smooth tops
  6. To colour ur macarons divided the batter into two bowls after u r half way through mixing then add desired colours here i used wilton leaft green and dark pink colours
  7. On a paper make template of strawberries and draw on to parchment paper
  8. Preheat ur oven to 150 c
  9. Pipe ur macarons and bang the tray properly if u dont bang properly u will have cracked macarons so go ahead and bang them
  10. Bake for min
  11. For filling
  12. Whip butter and cream cheese and icing sugar and mix properly and cut strawberries. Let the macarons cool completely then pipe the filling.

My Tip:

When ur separating egg whites see that u have no trace of egg yolk otherwise they dont whip properly.
