Mango and basil seeds pudding

Ingredients to make Mango and basil seeds pudding

  • Ripe mango fruit - 3 cups
  • water-1 cup
  • sugar 2 cups
  • Agar agar powder or eggs- 3
  • Vanilla essence- 4 drops
  • Basil seeds - 2 spoons ( soaked in water for 1 hour)

How to make Mango and basil seeds pudding

  1. If using agar agar powder, we can do it directly on stove top. Or if we choose eggs for setting the pudding, we should use double boiler method.
  2. In a sauce pan, add mango pulp or mango chunks , sugar, water , vanilla essence and boil it for 10 min.
  3. Now add agar agar powder and keep stirring for 5 to 7 min.
  4. Switch off the stove and mix basil seeds. Keep few soaked basil seeds for garnish.
  5. Pour this mix into glasses and let it set in refrigerator till we are ready to serve.
  6. Just before serving the dessert, add basil seeds and fruits which are available at home.
  7. Enjoy chilled dessert

My Tip:

If using eggs to set our pudding, for 3 cups juice, we need to add 3 eggs ( whisked well).
