Egg Schezwan Fried Rice

Ingredients to make Egg Schezwan Fried Rice

  • Cooked rice - 2 bowls
  • Spring onion - 1/2 cup
  • Eggs - 4
  • Dried red chilly -1 or 2
  • Star anise - 2
  • Garlic - 6 cloves
  • Ginger - 1/2 inch piece
  • Chings Schezwan sauce - 2 to 3 tsp
  • Food colour - one pinch (optional)
  • Olive oil
  • Salt according to taste

How to make Egg Schezwan Fried Rice

  1. Chop ginger and garlic to fine pieces, also cut the spring onions to fine pieces. Keep aside.
  2. Take a non-stick vessel, heat a little oil and make a plain scrambled omelette which is 3/4th cooked. Remove and set aside.
  3. Pour in some more oil, once the oil is hot add in the star anise. Let the flavor get infused with the oil.
  4. Now add the ginger and garlic pieces, dry red chilly and saute for few seconds. Put in half of the spring onions and saute again.
  5. Next add the schezwan sauce and salt. Stir this well. Add in the rice, remaining spring onions, and food colour along with the scrambled omelette. Mix well and cook on a high flame for few minutes.
My Tip: You can opt for vegetables like mushrooms, beans, capsicum, carrots and cabbage for a veg. You can also prepare using either prawns or boneless chicken for non veg.
