I lived in Medellin Columbia for a year, where i tried these veg fajitas for the first time!! Tasted yum with full of healthy vegetables and less oil with not much of masala. I had that with tortilla there, but now i tried the same fajita with our Indian chapatti and everyone loved it! here’s my version of veg Fajita :)

Veg Fajita

Ingredients to make Veg Fajita

  • Chapati/Flour Tortilla 7
  • Big Onion 1
  • Red Bell Pepper 1
  • Green Bell Pepper 1
  • Yellow Bell Pepper 1
  • Sweet corn 1/2 Cup
  • Button Mushrooms 8
  • Coriander leaves handful
  • Chili powder/Paprika powder 1 and 1/2 tsp (as per taste)
  • Cumin powder 1 and 1/2 tspoon
  • Lemon 2 tspoon
  • Chat masala 1 tspoon
  • Salt To taste
  • Olive oil 2 tbspoon
  • Sour Cream To Taste (Optional)
  • ketchup/ hot salsa - To spread
  • Tortilla crisps (Optional)

How to make Veg Fajita

  1. Cut all the veggies length wise and keep aside.
  2. Take a iron skillet, add all the veggies in the iron skillet. (Do not switch on the flame).
  3. Add olive oil, chili powder. cumin powder and mix well until all the veggies gets a good coat of chili and cumin powder.
  4. Before serving keep this iron skillet on the stove in high flame and let it sizzle.
  5. Mix well for 5-7 mins on the stove until the veggies are cooked crisp. (Do not cook for long, else the veggies will become soggy)
  6. Add coriander and lemon juice stir once and switch off.
  7. Place a Chapati/Tortilla, spread ketchup/hot salsa and place a spoonful of Fajita in the middle.
  8. Sprinkle chat masala, little sour cream and tortilla crisps and make a wrap. Serve hot.
