Ingredients to make Molten Chocolate Lava Cake

  • Dark chocolate- 200g
  • Butter- 200g
  • Egg yolks- 2
  • Eggs- 4
  • Sugar- 150g
  • Flour- 50g
  • Vanilla- 1 tsp
  • Butter for greasing and cocoa powder for dusting

How to make Molten Chocolate Lava Cake

  1. Take a microwave safe bowl, add in chocolate and butter. Microwave it for 1 minute. Stir to combine well. Add powdered sugar and mix well. Add beaten eggs and vanilla essence to it.
  2. Finally add all purpose flour, fold it lightly. Grease the ramekins with butter and sprinkle cocoa powder. Pour the batter in it.
  3. Bake for 12 minutes and take care not to over bake. Cool for few minutes then run a knife around the edges of the ramekins and flip it carefully. Serve with ice cream or fresh fruits.
My Tip: The key for the perfect lava cake is not to overcook the batter. The cake should rise a bit, ideally with a moist, fluffy, gooey texture, and glossy, fudgy top. The more you cook, the cake will toughen up and dry—so slightly undercook and keep an eye on it the whole time. They are simply awesome, soft and moist. I serve it as it is and get polished off within minutes. You can serve with whipped cream, or ice cream if you like. And of course, with strawberries or raspberries—the perfect partner for chocolate.
