ABOUT No Bake Dragon Fruit Jam Tarts RECIPE

Treat your loved one with these easy and healthy no bake tarts. The tarts get ready with just 3 ingredients. For the binding, I have used dates so as to use less butter. These tarts are filled with dragon fruit jam and topped with strawberries. Dragon fruits are rich in antioxidants, vitamin C, carotene, protein, calcium and iron. The seeds of dragon fruits are high in polyunsaturated fats (omega-3 and omega-6 fatty acids).

Ingredients Serving: 2

  1. For the Tart Crust
  2. 10 dates, seedless
  3. 7 digestive biscuits
  4. 2 tablespoon melted butter
  5. For the Dragon Fruit Jam
  6. ½ dragon fruit flesh, scooped
  7. 2 teaspoon sugar
  8. 1 teaspoon lime juice
  9. Topping
  10. Sliced strawberries

Instructions

  1. For the Tart Crust
  2. Take dates and digestive biscuits in a mixer/grinder and grind till you get a smooth mixture.
  3. Now take the mixture in a bowl and gradually add 2 tablespoon melted butter and mix well until the mixture resembles a dough.
  4. Line tart moulds with parchment paper. Divide crust between the moulds and press firmly using your hands to form a uniform crust. Press it more in the centre with your thumb to make space for our filling.
  5. Put in the freezer section of the refrigerator for about 10-15 minutes.
  6. For the Dragon Fruit Jam
  7. Cut the dragon fruit into two halves and scoop out the flesh using a spoon. Take scooped flesh in a mixer/grinder and blend to a pulp.
  8. In a thick bottomed non-stick pan, combine dragon fruit pulp and sugar. Cook on a medium flame and simmer until it has a thick jam like consistency. Keep on stirring occasionally. This will take about 20-25 minutes.
  9. Once you notice that it has begun to thicken, add lemon juice to it. Stir well and cook for about a minute.
  10. Remove from flame and allow it to cool.
  11. Assembling
  12. Take out the prepared tarts from the refrigerator.
  13. Put about a spoonful of dragon fruit jam on it.
  14. Garnish with sliced strawberry.
  15. Serve chilled.
