ABOUT Caramel custard RECIPE

caramel pudding is a custard dessert with a layer of soft caramel on top, as opposed to crème brûlée, which is pudding with a hard caramel top.

Ingredients Serving: 10

  1. 1 1/2 cup Granulated sugar
  2. 3cups Milk
  3. 2 whole eggs + 3 egg yolks
  4. 1/8 tsp salt
  5. 2 tsp vanilla essence
  6. 4 tbsp water
  7. 6-8 Remikins pots

Instructions

  1. Preheat oven to 180' C
  2. Add 4 tbsp of water in a pan over heat and add 1 cup of sugar and cook over medium heat keep swirling until caramel begins to turn amber (6-8 min)
  3. Quickly divide carmel into the remikins, swirling remikins to coat it bottom completely
  4. In a medium pot heat milk over medium
  5. In another bowl whisk whole eggs, egg yolks, salt and 1/2 cup of sugar and whisk in the milk
  6. Strain through a fine sieve and stir in vanilla essence
  7. Divide custard evenly into the remikins and place them into a pan filled with boiling water half way up to the sides
  8. Bake for 30-35 minutes until the custard sets
  9. Remove remikins from the hot water pan and let them cool completely
  10. Cover with cling and refrigerate them for 3 hours maximum upto 3 days
  11. To unmould run a sharp knife around and invert onto a serving plate and enjoy
