Chocolate and Zucchini Loaf

Ingredients to make Chocolate and Zucchini Loaf

  • 100 grams whole wheat flour
  • 70 grams cup all purpose flour
  • 55 grams unsweetened cocoa
  • 110 ml canola oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups grated zucchini
  • ¼ th teaspoon salt
  • 2 teaspoon baking powder
  • ½ teaspoon instant coffee powder
  • ½ cup semi sweet chocolate chips

How to make Chocolate and Zucchini Loaf

  1. Preheat oven to 350 degrees F/ 177 degrees C. Grease a 9 inch loaf tin.
  2. Place zucchini on a paper towel and gently dab to absorb moisture.
  3. In a large bowl combine whole wheat flour, all purpose flour, cocoa powder, baking powder, salt, coffee powder, chocolate chips. Whisk well to combine.
  4. In a medium bowl using a hand held mixer beat together oil, sugar, yogurt until combined. Add eggs one at a time and beat well till all the ingredients are well combined, add vanilla extract and beat. Set aside.
  5. Pour the wet ingredients into dry ingredients and now using a rubber spatula mix until just combined. Now gently fold in grated zucchini. Do not overmix.
  6. Pour the batter into prepared baking tin.
  7. Bake for around 50 – 55 minutes or until a skewer inserted comes clean.
  8. Let it cool down on a wire rack before slicing. Enjoy with your favorite sugar free preserve or peanut butter.
