ABOUT Coconut Streusel Topping Mocha Cupcakes RECIPE

Streusel toppings are very interesting. My local bakery makes these walnut mini cakes with a streusel topping. I had always wanted to replicate it.

Ingredients Serving: 6

  1. For the streusel:
  2. 1/4 cup + 2 tbsp - flour
  3. 1/4 cup + 2 tbsp - sugar
  4. 1/4 cup + 2 tbsp - desiccated coconut
  5. 2 tbsp - melted butter
  6. For the Mocha cupcakes:
  7. 2 cups - flour
  8. 2 & a 1/2 tsp - baking powder
  9. 3/4 cup - sugar
  10. 1/2 tsp - cinnamon powder
  11. 1 cup - milk
  12. 2 tbsp - instant coffee powder
  13. 1/2 cup - oil
  14. 1 - egg beaten
  15. 3/4 cup - chopped chocolate

Instructions

  1. Mix together all the dry ingredients. Mix together the milk and coffee powder.
  2. Add the oil and egg. whip the wet ingredients well. Fold in the dry ingredients. Add the chopped chocolate.
  3. Preheat the oven at 180 degrees Celsius. Fill the muffin cases half full. Sprinkle the streusel topping on top of the batter.
  4. Bake for 10 minutes. By this time the coconut topping will be nicely browned.
  5. Cover the cupcakes with an aluminum foil and bake another 20 minutes.
