Ingredients to make Navarathna parota

  • carrot gratings -1/2 cup
  • cabbage gratings -1/2 cup
  • Beetroot gratings -1/2 cup
  • onion finely chopped -1/2 cup
  • pudina finely chopped -1/2 cup
  • tomato very finely chopped -1/2 cup
  • Mashed peas -1/2 cup
  • capsicum finely chopped -1/2 cup
  • Dry fruit powder fried -1/2 cup (peanut, cashew,almond)
  • wheat flour -1 cup
  • maida flour-1/2 cup
  • besan-less than 1/4 cup
  • curd -1 tbsp
  • salt to taste
  • red chilli powder as per taste
  • coriander powder -1 tsp
  • jeera powder-1 tsp
  • Oil and ghee as required

How to make Navarathna parota

  1. Take a pan, add oil, heat it, add all the Navaratana veggies and start frying one by one until you get nice aroma. Add dry powders and mix well. Allow it to cool.
  2. Mix the veggies with wheat flour, maida flour and Besan, add salt. Mix well. Prepare the dough without using water, smear little oil and keep aside for 10 mins.
  3. Now roll out parota and fry them on hot tawa using ghee. Serve hot with curd and sauce.
