Ingredients Serving: 4

  1. Carrot gratings -1/2 cup
  2. Cabbage gratings -1/2 cup
  3. Beetroot gratings -1/2 cup
  4. Onion finely chopped -1/2 cup
  5. Pudina finely chopped -1/2 cup
  6. Tomato very finely chopped -1/2 cup
  7. Mashed peas -1/2 cup
  8. Capsicum finely chopped -1/2 cup
  9. Dry fruit powder fried -1/2 cup (peanut, cashew,almond)
  10. Wheat flour -1 cup
  11. Maida flour-1/2 cup
  12. Besan-less than 1/4 cup
  13. Curd -1 tbsp
  14. Salt to taste
  15. Red chilli powder as per taste
  16. Coriander powder -1 tsp
  17. Jeera powder-1 tsp
  18. Oil and ghee as required

Instructions

  1. Take a pan, add oil, heat it, add all the Navaratana veggies and start frying one by one until you get nice aroma. Add dry powders and mix well. Allow it to cool.
  2. Mix the veggies with wheat flour, maida flour and Besan, add salt. Mix well. Prepare the dough without using water, smear little oil and keep aside for 10 mins.
  3. Now roll out parota and fry them on hot tawa using ghee. Serve hot with curd and sauce.
