Kerala Roast Chicken

Ingredients to make Kerala Roast Chicken

  • Ingredients to Marinate:
  • 1/2 kg chicken (cut into medium pieces)
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 1 tbsp ginger garlic paste
  • 1 tbsp lemon juice
  • Roast chicken Ingredients:
  • 1 large onion (thinly sliced)
  • 2 tbsp grated coconut
  • 10 curry leaves
  • 4 whole green chillis
  • 1/4 tsp cumin seeds
  • 1/2 tbsp ground black pepper
  • oil as required
  • salt to taste

How to make Kerala Roast Chicken

  1. Marinate the chicken with the listed ingredients for 2 to 3 hours.
  2. In a deep frying pan/kadai, add oil, once the oil is hot add in the cumin seeds, onion and fry till its light brown. Then add the curry leaves and coconut, stir fry this for 1 to 2 minutes.
  3. Then add in the marinated chicken and salt, mix it well and cook for 10-15 minutes on a medium flame with the lid on. After that open the lid and start roasting the chicken on a high flame.
  4. Once all the liquid is evaporated and the masala is coated well to the chicken, add the green chillis and ground black pepper and roast till the chicken becomes golden brown in colour, this will take about 3-4 minutes.
  5. Sprinkle some more lemon juice on top.
  6. Serve hot with Kerala paratha, naan or plain rice.
