ABOUT Pheni paratha RECIPE

Its super soft and flaky paratha and compliment every gravy. Ilove to make this paratha but every time it tests my patience and precision. After so much of hard work the result is awesome .

Ingredients Serving: 2

  1. Maida 1 cup
  2. Salt 2 pinch
  3. Sooji. 1 tspn
  4. Warm water
  5. Sugar 1 tspn
  6. Ghee / butter 1/2 cup
  7. Exta maida for dusting
  8. Ghee for frying

Instructions

  1. Take maida ,sooji , salt , sugar and mix them nicely
  2. Now with warm water make a dough as u make for chapati
  3. Cover the dough and rest it for 20- 25 mins
  4. Now divide the dough in 4-5 equal parts
  5. Make the balls
  6. Now with a rolling pin roll out the ball very thin
  7. It will become very big and transparent
  8. Now apply good amount of ghee and spread all over it
  9. Sprinkle dry maida over it. It will prevent the stings from sticking
  10. Take a knife or pizza cutter and start cutting from top to bottom in thin lines
  11. After that with help of Ur finger tips try to scrape it towards middle
  12. Do it very gently and patiently
  13. Put all together in a thick line
  14. Now take it and roll it with Ur fingers as we do in laccha paratha or make a small spiral ball
  15. Make all balls and rest them another 5 mins
  16. Roll out each ball with Ur hands gently 4-5 inches
  17. Now ,cook on a medium hot tawa
  18. Apply ghee to cook it .crispy
  19. Pheni paratha is ready .
  20. Serve hot with any gravy
