Ingredients to make Ottappam/ Rice flour pancake

  • Rice flour - 1 cup
  • egg - 1
  • water as needed
  • salt to taste

How to make Ottappam/ Rice flour pancake

  1. 1.Mix the rice flour with salt and enough water to wet the flour.
  2. 2.Grind it in to a  very smooth paste.Pour the batter into another vessel.
  3. 3.Then add egg into the blender and blend it.
  4. 4.Reserve the egg shell.Pour it to the rice flour batter
  5. 5.Alternatively  you can beat egg well with a whisk and add to the batter.
  6. 6.Add enough water to dilute the batter to right consistency.A smooth silky batter thinner than dosa batter similar to appam batter.
  7. 7.To season the earthern pan,crush the reserved egg shell and rub it  onto the pan.Let it rest   for a minute.Then wash the pan without adding any soap.
  8. 8.keep it on high flame and make sure the center of the pan receives the flame.Let the pan heat well   until you see fumes arising from the pan.
  9. 9.Wipe the pan with a dry paper.
  10. 10.8.Lower the heat to medium high and drop a small ladle full of batter and spread it into a cirlce.
  11. 11.9.Cover with  the lid and maintain the heat between medium-high and high flame.After 30 secs open the lid and you can see the holes in the ottappam which makes it soft. Remove it with the help of spatula.
  12. 12.10.Serve with any spicy curries.

My Tip:

The batter should be smooth when rubbed between hands.A smooth batter gives soft appams.
