Murg Yakhni Pulao

Ingredients to make Murg Yakhni Pulao

  • 1 chicken ( cut boneless strips and reserve the rest)
  • For the yakhni: 1 onion quartered
  • 4-5 garlic pods
  • 1 tbsp ginger cut in julienne style
  • 1 bay leaf
  • 1 javitri/mace
  • 2 green and black cardamoms
  • 2 tbsp whole coriander seeds
  • 2-3 cloves
  • 10 peppercorns
  • 1 cinnamon
  • 1 tsp nutmeg powder
  • 1 tbsp salt
  • For the pulao : 1 cup basmati rice washed and soaked
  • 2 potatoes quartered
  • 1 tsp cumin seeds
  • 2 onions and tomatoes sliced fine
  • 1 tbsp ginger paste and garlic paste
  • 1 cup curd
  • 1 tbsp garam masala powder
  • Salt to taste

How to make Murg Yakhni Pulao

  1. Wash and soak the rice as you start working on the dish.
  2. Take 4 cups of water in a pan, add the yakhni masalas and the reserved chicken pieces. Boil this for 20 minutes.
  3. Meanwhile start cooking the pulao. Heat some ghee, and add in the cumin seeds. Then put in the ginger-garlic paste. Saute and cook this.
  4. Then add the sliced onions and cook till they turn brown. Add in the quartered potatoes and fry them on high heat. Then lower the heat and add the tomatoes, cook till they become mushy.
  5. Now put in the garam masala and salt to taste. Pour in the curd and stir for about 5 minutes. Next, add the chicken pieces. Cover this and let it cook for 5 minutes.
  6. Finally put in the soaked rice and the yakhni stock. Bring it to a boil, Cover and simmer till all the liquid evaporates and the rice is cooked properly.
  7. Serve hot alongside raita or a gravy dish.
