ABOUT Orange & Chocolate - Indian Ghee Cakes RECIPE

This is my 200th post on a superb food page on Facebook. Dedicated to Bakhtawar, who introduced me to this page and his mom Alka for accepting me as a part of their family. My friend Jasdeep Kaur gave me the basic recipe but I tweaked it. I've used organic cow's ghee for these cakes and I think it is the best medium.

Ingredients Serving: 8

  1. 2 cups - all purpose flour
  2. 1 tsp - baking powder
  3. 1/4 tsp + 1/4 tsp - baking soda
  4. 1 cup + 1 tbsp + 2 tsp ghee/ clarified butter
  5. 1 cup - powdered sugar
  6. 4 eggs (yellow and white separate)
  7. 1/2 cup - milk
  8. 2 tsp - sugar
  9. 1/2 tsp - vanilla essence
  10. Orange Cake:
  11. Fine zest of 2 oranges
  12. 1/2 cup - orange juice
  13. Chocolate Cake:
  14. 1/2 cup - cocoa powder
  15. 1/2 cup - water
  16. 1 tbsp - sugar
  17. 1 tbsp - sugar
  18. 1 tsp - coffee
  19. 1 tsp - vanilla essence

Instructions

  1. Basic Cake: In a bowl sift all purpose flour, baking powder and baking soda. In another bowl, beat ghee and powdered sugar until light and fluffy.
  2. Add egg yolks one at a time. With the beater on low speed, alternately add flour and milk to ghee mixture, beginning and ending with flour.
  3. In another bowl whisk egg whites, then gradually add 2 tsp sugar and vanilla essence and continue to beat until stiff.
  4. Fold an egg white mixture in to the ghee mix. Pour in to a well-greased cake tin and bake in a preheated oven of 180°C for 50-55 minutes.
  5. Orange Cake: Add orange zest to ghee and egg yolk mix before adding to flour mix. Once the cake is ready pour orange juice over it and let it soak.
  6. Chocolate Cake: Substitute 1/2 cup of maida with 1/2 cup of cocoa and follow the method for the normal cake.
  7. Make a thin syrup of water, sugar, vanilla essence and coffee. Pour it on the chocolate cake when just baked and let it soak in while it is cooling.
