CARROT RABDI

Ingredients to make CARROT RABDI

  • Greated carrots - 1 cup
  • mawa / khoya - 75 gm
  • ghee - 1tablespoons
  • cashewnuts - 10 no
  • Milk - 600 ml
  • Condensed milk - 4 tablespoons
  • sugar - 3/4 cup
  • cardamom powder - 1teaspoon
  • For garnished :::::
  • Cherries and rose petals

How to make CARROT RABDI

  1. Heat ghee in a pan and cook the carrots and cashewnuts for 2 minutes till the raw smell of the carrots and cashewnuts turns pink .
  2. Remove from the heat and cool to room temperature .
  3. Grind the half portions of carrots and cashewnuts mixture to a coarse paste by adding 2 - 3 tablespoons of milk and keep aside .
  4. In a deep bottom pan boil the milk , add them half portions of carrots and boil for 10 minutes then add carrots and cashewnuts mixture , mawa , sugar and condensed milk and mix well then cook till the sugar dissolved and milk is thicker consistency .
  5. After a while the mixture will start coating the back of the spoon and will also start leaving the sides . This is sign that carrot rabdi is done .
  6. Serve hot or chilled :heart_eyes: :heart_eyes:
