ABOUT Strawberry Melon Cucumber One-meal Salad RECIPE

This wholesome salad bursting with colors and flavors is a perfect choice for any salad lover. If given a choice between any exotic dish and a big bowl of salad, my hubby would always prefer salad. So, salads are always an essential part in our daily menu as well as in special feasts.

Ingredients Serving: 4

  1. Strawberry - 1\2 cup, halved
  2. Watermelon - 1\2 cup, cubed
  3. Papaya - 1\4 cup, cubed
  4. Cucumber - 1\2 cup, thinly sliced
  5. Sweet Potato - 1\4 cup, peeled, diced and boiled
  6. Potato - 1\4 cup, peeled, diced and boiled
  7. Lettuce - 3 or 4 leaves
  8. For Minty Honey Lime Dressing
  9. Olive oil- 1\2 tbspn
  10. Honey - 1 tbspn
  11. Lime Juice - 3\4 tbspn
  12. Fresh Mint leaves - 10 or 12, torn into pieces
  13. Red Chilly Flakes - a pinch (optional)
  14. Salt and pepper to taste
  15. To Garnish
  16. Roasted Pine Nuts - a handful
  17. Raw Chia Seeds - 1\2 tbspn

Instructions

  1. Wash, Chop and prepare the fruits and veggies as mentioned above. While doing so take care to chop them into bite-sized pieces.
  2. Halve the strawberries. Peel, deseed watermelon and papaya. Chop them into cubes.
  3. Slice the cucumber with the skin into thin semi-circles. Peel and cube sweet potatoes and potatoes. Cook them until soft but firm.
  4. Wash and pat dry the lettuce leaves.
  5. To prepare the salad dressing, mix olive oil, lime juice, honey, crushed fresh mint leaves, salt and pepper in a small bowl. Add a pinch red chilly flakes if required. Keep it covered for few minutes so that the flavor gets infused.
  6. In a large bowl, mix the prepared fruits and veggies. Drizzle the salad dressing over and gently toss with the help of a spatula or a fork.
  7. Line a salad plate or a flat bowl with lettuce leaves. Pile the prepared salad in the center.
  8. Garnish with roasted pine nuts and raw chia seeds. Serve immediately or chilled.
