ABOUT 5 Minute Magic - Veggie Fried Rice! RECIPE

This recipe is a big hit at my home because It can be made very fast and with left over rice. I make it very often as it goes very well with any curry and most importantly, it tastes amazing with just raita. Try this recipe and I am sure you will make it again and again... Happy cooking friends!

Ingredients Serving: 4

  1. Capsicum (chopped) - 1/4th of a cup
  2. Carrot (chopped) - 1/4th of a cup
  3. Beans (chopped) - 1/4th of a cup
  4. Onions (chopped) - 1/2 cup
  5. Green Chili - 3 small (sliced into long pieces)
  6. Turmeric powder - 1/4 tea spoon
  7. Cumin Seeds - 1/2 tea spoon
  8. Salt to taste
  9. Boiled Rice (You can use left over rice as well) - 2 Cups
  10. Oil - 2 tea spoon
  11. Lemon Jiuce - 2 tea spoon

Instructions

  1. Heat Oil in a pan/kadhai and put cumin seeds
  2. Once the cumin seeds starts to splutter, add in all the veggies (i.e., capsicum, carrot, onion, chili, beans) and fry them (medium flame) until they are done (say for 2 to 3 minutes)
  3. Now add in a pinch of turmeric and salt and cook it on very low flame with lid on for another minute.
  4. Open the lid and add in the rice and mix it well until everything is mixed very well
  5. Now cover the lid for 2 more minutes and let it steam
  6. Open the lid and squeeze in 1/2 lemon juice (say 2 spoon) and serve hot with daal or curry of your choice
