Strawberry Orange Chocolate Pavlovas

ABOUT Strawberry Orange Chocolate Pavlovas RECIPE

Pavlova was a dessert created in honor of ballet dancer Anna Pavlova while she was visiting Australia and New Zealand. Pavlova is made by beating egg whites till stiff consistency to which cornflour, sugar, and vanilla is folded in gently. The pavlova is slow based to attain crisp texture outside while the inside is soft. It's topped with whipped cream and variety of fruits.

Ingredients Serving: 8

  1. 4 egg white (room temperature eggs)
  2. 1 cup (225g) superfine (caster) sugar
  3. 1 tbsp cornflour
  4. 1 tsp Apple Cider Vinegar
  5. 1/2 tsp Vanilla extract
  6. 2 tbsp dark melted chocolate
  7. Topping---
  8. 8 strawberries hulled and cut in halves
  9. Orange segments from 2 oranges
  10. Orange zest from 1 orange
  11. 2 tbsp Brandy
  12. 2 tsp fine sugar
  13. Sugar free strawberry syrup as needed
  14. Whipped cream as per need
  15. Chocolates or shaved chocolate
  16. Icing sugar for dusting
  17. Whipped Cream---
  18. 1/2 cup full cream
  19. 1 tbsp maple syrup

Instructions

  1. Preheat oven to 325 Deg F (160 Deg C).
  2. Make sure eggs are free of yolks. Wipe dry all the bowls and whipping blades till absolutely dry.
  3. Whip egg whites with handheld mixer on low speed initially till it starts thickening.
  4. Add sugar teaspoon at a time whipping after each addition till all sugar is used up and stiff peaks form. (Set aside 2 teaspoons of sugar).
  5. Sprinkle cornflour over the meringue and fold in lightly till throughly mixed.
  6. Combine vanilla extract, 2 tsp sugar, and vinegar and whisk well. Add it to meringue and fold lightly till combined.
  7. Prepare large baking tray for baking. Take ovenproof parchment sheet. Draw 16 9-cm circles on the sheet.
  8. Place the parchment sheet on baking tray. Flip the sheet so the drawn circles are on the reverse side.
  9. Place tablespoon of meringue within the drawn circular stencil.
  10. Take small quantity of melted chocolate and drizzle over the meringue. With a toothpick swirl the chocolate in the meringue to give it a pattern.
  11. Drop another tablespoon of meringue on the circles (to give depth).
  12. Again drizzle chocolate and swirl in to the meringue. Make small dents in the center of the meringue.
  13. Bake in the oven for 5 minutes and then lower temperature of oven to 225 Deg F (107 Deg C) for 45 minutes.
  14. Remove tray from oven and cool for 10 minutes. Transfer to wire rack to cool thoroughly.
  15. Handle them gently as they are very light and breakable.
  16. Topping---
  17. Whip cream on low speed and then increase speed till soft peaks form (approximately 3 minutes). Fold maple syrup in it till well combined.
  18. Combine orange, strawberries, Brandy, sugar and zest together in a bowl. Leave them to rest for 30 minutes till flavors are infused.
  19. Assemble---
  20. Place the pavlova in the serving dish. Pipe the whipped cream in the hollows of the meringue.
  21. Arrange orange segments, strawberries and chocolate over the whipped cream. Drizzle with strawberry syrup and dust with icing sugar.
