ABOUT Mutton Curry in Ghee RECIPE

I'd bought some superb organic cow's ghee and had to try this recipe. It totally changed the flavour of the mutton and since then I have become a convert to cooking with ghee.

Ingredients Serving: 6

  1. 1 kg - mutton
  2. 3 tbsp - Sunshine ghee
  3. 1 kg - onions sliced and fried
  4. A little kasoori methi powdered
  5. 100 gms - cream
  6. Marination (put the masalas according to your taste)
  7. Half the fried onions
  8. Yogurt to coat the meat
  9. Red chilli powder and Kashmiri chilli powder
  10. Turmeric powder and coriander powder
  11. Roasted cumin powder and ginger powder
  12. Handful of chopped mint and coriander
  13. Juice of 1 lemon
  14. A pinch of saffron
  15. Salt as per taste
  16. For the tempering
  17. Bay leaves 2 cinnamon 1 cloves 4
  18. 1 cup tomato puree
  19. Water as required

Instructions

  1. Mix all the ingredients of the marinade thoroughly. Coat the mutton pieces well. Let it marinate for at least 2 hours or overnight.
  2. In a pot heat the ghee and put the tempering ingredients. Once they start crackling, add the remaining fried onions and the marinated mutton.
  3. Roast until the ghee separates.
  4. Add the tomato puree and again roast on a low heat until the ghee separates again.
  5. Check for seasoning.
  6. Depending on how much gravy you want, add water and cook on low flame until the meat is cooked.
  7. Add the kasoori methi and cream, bring to a boil and serve
