ABOUT Eggy and Cheesy Pesarattu.. RECIPE

The mere mention of the name makes it clear that is a fusion of both the egg and the cheese as well. One more fusion by me made just to please my kids and make them eat the eggs. I didn't realize that it will be such a great hit with them. Crunchy, crispy and cheesy fun to the last bite. Go for it.

Ingredients Serving: 6

  1. Whole green gram or sabut moong 2 cups
  2. Raw rice 1 cup
  3. Salt to taste
  4. Coriander leaves a handful
  5. Red chilli flakes 1 tbsp
  6. Ginger 1" piece
  7. Oil for making dosas
  8. Mozzarella cheese grated 1 cup
  9. Eggs as required. One for each dosa
  10. Chilli flakes and dry parsley to sprinkle on the dosas as required.
  11. FOR THE COCONUT AND SPLIT GRAM DAL CHUTNEY :::
  12. Coconut grated 1/2 cup
  13. Split gram dal (putnalu or dalia) 1/2 cup
  14. Garlic 2 cloves
  15. green chillies 3
  16. Salt to taste
  17. FOR THE TEMPERING:::
  18. Oil 1 1/2 tbsp
  19. Black mustard seeds 1 tbsp
  20. Dry button red chillies 3-4

Instructions

  1. Make a semi thick batter just like the normal dosa batter. Make dosas as usual.
  2. After it is almost done, lower the flame.
  3. Whisk an egg with little salt and pour it on the dosa. Cook it covered on a low flame.
  4. After the egg gets cooked in a minute or so, sprinkle the cheese, the chilli flakes and the dry parsley
  5. Cook it just until it melts and serve right away. This is super yummy combination for the kids.
  6. Serve it as it is. Or with ketchup which is their all time favourite. For the adults serve it with any chutney of your choice. I served these with coconut and split gram dal chutney.
  7. For the chutney, grind all the ingredients and add the tempering to it for that awesome flavour.
