The best Indian fried snack ever! These are soft inside and delightfully crisp outside...a must for monsoon evenings with a cup of masala chai!

Ingredients Serving: 4

  1. 200g besan/gram flour
  2. 2 medium onions sliced
  3. 2medium sized potatoes
  4. 4-5 large green chillies slit and rubbed with little salt/chaat masala
  5. salt acc. to taste
  6. 1/2 teaspoon dry mango powder(amchur)
  7. 1/4 tsp ajwain
  8. a pinch of baking soda
  9. chaat masala for sprinkling on top
  10. water as required

Instructions

  1. Take a bowl and add gram flour and water, make a medium consistency batter, add salt, red chilly powder, ajwain, baking soda and dry mango powder.
  2. Mix well and keep aside.Heat oil for deep frying in a kadhai.Now peel the potatoes and slice them into thin round pieces with a knife.Dip the potatoes, green chillies and onion rings one by one into the gram flour batter and then drop directly into the hot oil.
  3. Fry until golden brown. Drain well on paper towels. Sprinkle a little chaat masala on top.Serve the pakoras piping hot with mint chutney/ketchup or tamarind sauce.

You could probably try this. Grind 2tblsp of roasted til/sesame seeds,a ping pong ball size of tamarind and salt and stuff in the large green chilies. then dip it in the batter but without amchur /mango powder. deep fry and put in a paper towel to get rid of excess oil. serve hot on a rainy day!
