ABOUT Orange Ginger Bhut Jolokia Chutney / Jam RECIPE

This is my friend Farah Pasha's recipe. An awesome cook, she experiments with flavours and sent me this with pineapple. Instead I used an orange to make a sort of spicy marmalade. Bhut Jolokia are very spicy chilies from North East India.

Ingredients Serving: 4

  1. 2 cups - fresh orange juice
  2. 2 - smoked bhut jolokia chopped very fine
  3. 1 tsp - smoked chili flakes
  4. 50 gms - finely chopped ginger
  5. 100 gms - sugar
  6. 1 tablespoon - salt
  7. 1 cup - segments of orange

Instructions

  1. In a pan put the strained orange juice, orange segments, sugar and salt. Let it boil till it thickens.
  2. Only when it has thickened add in the ginger, bhut jolokia and the chili flakes. Simmer for a further 10 minutes.
  3. For the caramelized version: Cook on a low flame until the colour changes to gold.
  4. Pour into a sterlised jar. Can be stored for a long time in the fridge
