Ingredients to make Ratatouille

  • 1 onion finely sliced
  • 1 small brinjal cut into square pieces
  • 4 tomatoes chopped
  • 1 red capsicum finely sliced
  • 1 small zucchini thinly sliced
  • 4 garlic cloves grated
  • 1 bay leaf
  • Handful of basil leaves shredded
  • 45 ml olive oil
  • Salt and pepper to taste

How to make Ratatouille

  1. Take a pan and heat oil in it.
  2. Once the oil is hot put in the bay leaf, grated garlic and onion. Saute and cook till the onion becomes soft and changes colour.
  3. Next put in the brinjal and cook for 7-8 minutes till it has softened.
  4. Then put in the the capsicum along with the zucchini, tomatoes and salt-pepper according to taste. Stir well and cook on medium heat.
  5. Lower the heat and let simmer and cook for another 7-10 minutes or till the vegetables are soft.
  6. Once cooked, transfer into a serving bowl.
