ABOUT Ragda Pattice RECIPE

Ragda pattice is popular fast food ( street food) of Maharashtra and Gujarat, actually its variation of aloo tikki.

Ingredients Serving: 4

  1. For Ragda -yellow dried peas 100 gms
  2. Chopped onion 1 small
  3. Turmeric powder 1/4 tsp
  4. Ginger Garlic paste 1/2 tsp
  5. Garam masala 1 tsp
  6. Red Chilli Powder 3/4 tsp
  7. Finely chopped green chilli 1 tsp
  8. Grated jaggery 1 tsp
  9. Tamarind soaked 1 tsp
  10. Asafoetida big pinch
  11. Cumin 1 pinch
  12. Oil 2tbs
  13. Salt
  14. For pattice -
  15. Potatoes big 8
  16. Grated ginger 1 tsp
  17. Finely chopped green chilli 2 tsp
  18. Finely chopped coriander 2 tsp
  19. Lemon juice 1 tsp
  20. Sugar 1/2 tsp
  21. Cornflour 2 tbsp
  22. Salt
  23. Oil for Deep frying
  24. Green chutney 1 tsp
  25. Imli chutney 1 tsp
  26. Chopped onion 1 tsp

Instructions

  1. Soak dried peas for 4 -5 hour. Drain, add 4 cups of water and pressure cook for 2 whistle.or untill the peas are soft.
  2. Take a wok, heat oil. Add cumin and asafoetida, let it crackle.
  3. Then add chopped onion, saute, till it becomes golden brown.
  4. Add ginger garlic paste, garam masala powder, red chilli powder, turmeric powder and green chilli, mix well, fry till masala leaves the sides of wok.
  5. Add peas, jaggery n tamarind pulp. Mix properly. Cover the lid. Simmer for 10 mins. Keep aside.
  6. Now boil, peel and mash the potatoes, add cornflour, salt, chilli, ginger, coriander, lemon juice and sugar. Knead ti a soft dough. Make pattice.
  7. Shallow fry the pattice on a non stick pan till the pattice are golden brown and crisp.
  8. For serving, place 2 pattice on a plate and pour the ragda over. Top with both chutneys. Sprinkle coriander, onion, red chilli powder on top. Serve hot.
