Love Letter (Madakku San)

Ingredients to make Love Letter (Madakku San)

  • 1 1/2 cups all purpose flour (Maida)
  • 1 cup milk
  • 4 tablespoons sugar, divided
  • 1 egg
  • 1 cup grated coconut
  • 1/2 teaspoon cardamom powder
  • 1 teaspoon ghee
  • Salt to taste
  • Water as required

How to make Love Letter (Madakku San)

  1. For the batter -
  2. Beat the egg in a medium bowl. Add 2 tablespoons sugar,milk and half a cup water. Mix everything well. Keep aside.
  3. In a large bowl combine all-purpose flour and salt. Add the wet ingredients to this to a make a smooth lump free batter. The batter should be slightly runny. Adjust adding water accordingly.
  4. For the filling -
  5. Heat oil in a pan over medium heat. Add ghee, grated coconut and the remaining sugar. Stir well for 2-3 minutes until sugar is melted and raw flavour of coconut disappears.
  6. Now add the cardamom powder and mix well. Switch off the flame. Allow the filling to cool completely.
  7. For the crepes -
  8. Heat oil in a non stick tava over medium high heat. Pour a ladleful batter and spread using the back of the ladle to form thin circle.
  9. Once the bottom of the crepe is cooked flip over to the other side. Cook until golden brown.
  10. Transfer to a plate. Make similar crepes with the remaining batter. Stack the crepes and allow them to cool.
  11. Now take one crepe and gently spread 2 tablespoons of coconut filling. Fold the crepe like a roll sealing the edges with fingers.
  12. Serve warm with tea and spread the love.
