Pyaaj ki kachori is a traditional Rajasthani fried bread with spicy onion filling I followed the recipe of Tarla dalal.

Ingredients Serving: 4

  1. All purpose flour -2 cups
  2. Melted ghee or oil -1/4 cup
  3. Salt -1/4 teaspoon
  4. Onions-2 cups finely chopped
  5. Oil for onion filling -2 tablespoons
  6. Nigella seeds-1 teaspoon
  7. Fennel seeds -2 teaspoons
  8. Roasted Bengal gram flour-2 tablespoons
  9. Coriander powder-2 teaspoons
  10. Chilli powder-2 teaspoons
  11. Garam masala -1teaspoon
  12. Salt - according to taste
  13. Oil for deep frying

Instructions

  1. Combine flour , melted ghee and 1/4 teaspoon salt and knead into a semi-soft dough using enough water.keep aside for 10 minutes.
  2. Heat two tablespoons oil in a pan , add nigella seeds, fennel seeds, onions and saute on medium flame for 5 minutes.
  3. Add gram flour coriander powder, chilli powder,garam masala and salt , mix well, cook for one minute.now switch off the flame and keep aside this mixture.
  4. Divide the dough in 12 portions, roll each portion and place onion filling in the centre, seal it tightly and roll the filled portion thick.Fill all kachoris like this.
  5. Heat oil in Kadhai (pan), and fry kachori on medium flame till light brown in colour.
  6. Pyaaj kachori is ready.
