ABOUT Royal Rabdi RECIPE

Royal Rabdi is a rich creamy dessert made from reducing milk, this is a awadhi cuisine.

Ingredients Serving: 4

  1. Milk 1.5 litres
  2. Sugar 200 gm
  3. 15-20 saffron strands soaked in 4 tbsp milk
  4. 10-15 almonds blanched
  5. 1 tbsp Pistachios
  6. 1 tbsp cashew nuts
  7. 1 tsp rose petals

Instructions

  1. Heat milk in a broad pan and bring it to a boil once.
  2. once milk starts boiling, keep it stirring for 40 minutes.
  3. Keep stirring to avoid the milk sticking to the bottom
  4. After 40 mins milk will be reduced to half , now add sugar to it.
  5. keep stirring and add saffron diluted milk and cook it, so that sugar gets dissolved.
  6. Add blanched almonds and cook upto 10 minutes more .
  7. switch off the flame and cool to room temperature.
  8. Add cashew nuts and pistachios along with rose petals .
