ABOUT Khajoor Shrikhand RECIPE

Shrikhand is an all time favourite dessert in Gujarat. The simple blend of hung yogurt and sugar spiked with some nuts and aromatics never fails to please the tastebuds. Shrikhand is an absolute must during the summers, a season when we up the yogurt intake to escape the side effects of extreme heat. The Khajoor Shrikhand is a simple, refreshing and healthy dessert to make. The amount of added sugar can be curtailed to a great extent. I am not required to add any sugar in the Khajoor Shrikhand I make. The key is to use very thick chakka and good quality dates. The moist and sweet the dates are the better it is for the Shrikhand. Try to blend the mix with a balloon whisk so as to maintain the tightness of the yogurt. Chill the Shrikhand ( 5 hours preferred) very well before serving. It makes an ideal dessert for those managing weight or control sugar.

Ingredients Serving: 3

  1. 1 cup chakka/ hung yogurt
  2. 1cup Khajoor/Dates, soft and good quality
  3. Sugar to taste
  4. 1/4 cup milk, to soak the dates
  5. 2tablespoons dates, chopped
  6. 2 tablespoons cashew nuts, toasted and chopped
  7. 2 tsp toasted charoli/chironji
  8. 1/4 teaspoon cardamon powder
  9. Ground Nutmeg, couple of pinches

Instructions

  1. Deseed the dates and roughly chop them.
  2. Soak the chopped dates in the milk.
  3. If using sugar add it to the soaked dates. Amount of sugar to be added will depend on the sweetness of date.
  4. Allow the dates to soak up for 2-3 hours.
  5. Grind the soaked dates to make a puree.
  6. Pass the pureed dates through a fine sieve to get a smooth paste.
  7. Using a ballon whisk, lightly beat the hung curd.
  8. Fold in the pureed dates, chopped dates, cardamon powder and nutmeg powder
  9. Garnish with toasted cashews and charoli.
  10. Serve chilled
