ABOUT Garlic Pickle RECIPE

Chef Rajesh was gracious enough to share his grandmother's recipe with me. It is the best garlic pickle I have ever eaten.

Ingredients Serving: 4

  1. Garlic - 1/2 kg (peeled and cut into two halves lengthwise)
  2. 2 tbsp - mustard seeds
  3. Sesame oil - 150 ml
  4. Lemon juice - 1 & 1/2 cups (300 ml)
  5. Ingredients for the pickle powder:
  6. Coriander seeds - 50 gms (1/2 cup)
  7. Fenugreek seeds - 1 tablespoon
  8. Chili powder - 3 tablespoons
  9. Jaggery - 1 tablespoon
  10. Salt as per taste

Instructions

  1. Dry roast the coriander seeds and fenugreek seeds and grind it to a smooth powder.
  2. Heat a pan. Add the sesame oil and the mustard seeds till it crackles. Add garlic and sauté for 5 to 6 minutes till the garlic softens.
  3. Add the lemon juice and allow it to cook on a low flame for 5 minutes.
  4. Now add the coriander powder, chilli powder, fenugreek powder and the salt required.
  5. Let this powder also get cooked till the oil begins to separate (5 minutes).
  6. Add the jaggery and turn off the gas after 2 minutes.
  7. Allow it to cool and transfer the contents to a clean bottle.
