Ingredients Serving: 6

  1. For Rabdi-
  2. 1.25 litres full fat whole milk
  3. 3 tablespoon sugar or as per your taste
  4. ½ teaspoon cardamom powder
  5. 12 to 15 saffron strands
  6. 2 tablespoon almonds chopped
  7. 2 tablespoon pistachios chopped
  8. Ingredients for Malpua-
  9. 1 cup maida
  10. 1 bowl peas boiled and made into a fine paste
  11. 1 cup sugar
  12. 1 teaspoon cardamom powder
  13. 1 teaspoon fennel powder
  14. 1 tablespoon chopped almonds and pistachios
  15. 1 cup milk, if required
  16. Oil for frying
  17. Ingredients for Sahi tukda-
  18. 2 bread slices cut into desired shapes
  19. 1 cup sugar or as per your taste
  20. Ingredients for Faluda-
  21. 1 cup seviyaa

Instructions

  1. For Rabdi- Take 1.25 litres of full fat whole milk in a thick bottomed kadai or pan & heat the milk on a low to medium flame, till the milk starts to froth or form with a layer of cream/malai on top.
  2. Keep removing the cream layer by stirring
  3. Bring it towards the side of the pan and stick it to the wall of the pan.
  4. Once the milk reduces to half, then add sugar.
  5. After that add a 12 to 15 strands of crushed saffron and 1/2 tsp cardamom powder. stir gently.
  6. After adding saffron, the color will change gradually to a yellow color.
  7. As the milk keeps on reducing. when the milk gets reduced to 1/3 or 1/4 of its original quantity, then switch off the flame. stir gently.
  8. Then add the sliced almonds & pistachios. Your Rabdi is ready.
  9. For Malpua- Take all ingredients and mix it nicely and keep aside for 15 min.
  10. Then take non stick pan and swallow fry malpua. Your malpua is ready.
  11. For Sahi Tudka- I have made it in different ways. Cut the bread in heart shaped with cutter.
  12. Take a pan, add sugar and caramelize it and put bread pieces. Coat slices with caramel. Your Sahi tukda is ready.
  13. For Faluda- Take pan put water, then put seviyaan, 1 teaspoon oil and boiled for 5 minutes.
  14. After that strain it in strainer and put strainer in running water. Your Faluda is ready.
  15. Now assemble the Rabdi chat. Take plate put rabdi and arrange everything and garnish with pomegranate.
  16. Serve
