ABOUT Kesar Sandesh RECIPE

Kesar sandesh ( shondaesh ) is Bengali sweet made from paneer (Chenna).

Ingredients Serving: 3

  1. 2 litre milk
  2. 2 tbsp lemon juice
  3. 100 Gm powdered sugar
  4. 20 saffron strands
  5. 1 tbsp cardamom powder

Instructions

  1. Bring milk to a boil .
  2. Once it starts boiling add lemon juice to it and milk will start curdling.
  3. When the milk curdles and whey separates, switch off the gas and drain it through a strainer .
  4. Take chenna in a muslin cloth. Tie from the top and hang for two hours.
  5. Refrigerate the chenna in the cloth for 1 hour.
  6. Take out paneer from refrigerator and knead it well with hands for about 10 mins , till it becomes soft.
  7. Add powdered sugar , saffron strands and cardamom powder and mix it well.
  8. Heat kadai add this mixture to kadai , cook on very low flame for 5 minutes. Stir while cooking
  9. cool it to room temperature.
  10. You can make sandesh in any shape
  11. I shaped sandesh like a peda and pressed with the back of a cupcake mould to get a pattern.
  12. Kesar sandesh is ready. Serve
