Ingredients to make Gudd Ke Chawal /Jaggery Sweet Rice

  • 300 grams India Gate Basmati
  • 250 grams jaggery
  • 1 medium Fresh coconut
  • 1-2 cinnamon sticks
  • 3-4 cloves
  • 2-3 bay leaves
  • 1 tbsp pure ghee
  • 1/2 onion
  • Pinch of salt
  • Few Safforon threads

How to make Gudd Ke Chawal /Jaggery Sweet Rice

  1. Scrape coconut and add some warm water to this and blend
  2. Soak rice now for 15 minutes
  3. Strain the blended coconut milk through fine mesh and get thick coconut milk
  4. Squeeze coconut milk. By blending again with warm water and collect thick and thin milk separately
  5. Crumble the jaggery. Add to the thick milk and cook on low heat
  6. In a pot, heat ghee and saute cinnamon cloves and bay leaf along with onions
  7. Add soaked rice to it and cook in thin coconut water kept aside,add pinch of salt and saffron threads
  8. Cook upto ten minutes check the grain if almost done pour the coconut milk and jaggery syrup
  9. Mix well and cover cook on low flame for 5-10 minutes
  10. When all the water is absorbed, let it sit for 10 minutes. Serve

My Tip:

Blend scraped coconut with hot water and squeeze thick milk first keep aside Then add more water to the coconut and squeeze again and keep this thin milk aside too. Use jaggery as per your taste
