Ingredients to make Carrot Halwa Cups With Rabri

  • 3 large carrots
  • 1/4 cup ghee
  • 1/2 cup Sugar
  • 1 1/2 cup milk
  • 2 tbsp milk powder
  • 1/4 tsp cardamom powder
  • 1 1/2 tbsp cashewnut
  • 1 tbsp almonds
  • 1/2 tbsp pistachio
  • For Rabri -
  • 500 ml full fat milk
  • 3 tbsp sugar
  • 1/4 tsp cardamom powder
  • Almonds chopped 2 tbsp
  • Cashew chopped 2 tbsp
  • Pistachio chopped 1 tbsp
  • gelatin 1/2 tbsp
  • Water 2 tbsp
  • Saffron few strands
  • sugar sprinklers

How to make Carrot Halwa Cups With Rabri

  1. Melt ghee and roast nuts then add grated carrots and saute for a while
  2. Then add the milk and cook till carrots are soft. Then add milk powder,cardamom powder add sugar and cook until thickened and allow it to cool.
  3. Line a muffin pan with plastic stretch wrap, take 2 tablespoons of Halwa, press down into muffin mold, firmly around the sides and bottom forming a cup. Refrigerate for an hour until firm.
  4. To prepare Rabri -
  5. Boil the milk in medium flame
  6. Once it comes to boil, keep the flame low and cook slowly.
  7. Stir frequently and let the malai (cream) collect in the sides
  8. Keep stirring the milk once in a while, so that it does not stick to the bottom and collect malai / cream on one side and continue till it is thickened and reduced
  9. soak gelatin in water let it dissolve
  10. Soak the saffron in milk and add to it.Now add sugar, cardamom powder and melted gelatin stir it in well. Then add the nuts .
  11. Pour this into the halwa cups and allow it to set. Top with sugar sprinklers
