ABOUT Healthy Dry Fruit Roll RECIPE

As the name suggests, healthy dry fruit roll is power packed with loads of nuts and natural sweetness of dates. It has no added sugar or any other form of sweeter which makes it edible for all including diabetic. Idea inspiration by my Father in law who is a diabetic but big fan of desserts.

Ingredients Serving: 5

  1. Dates 2 1/2 cups
  2. Almond 1/2 cup
  3. Pistachios 1/2 cup
  4. Walnut 1/2 cup
  5. Raisin 1/2 cup
  6. Sunflower seeds 2 tsp
  7. Flax seeds 2 tsp
  8. Sesame seeds 2 tsp
  9. Dry Coconut grated 2 tsp
  10. Ghee 1 tbsp
  11. cardamon powder 1 tsp
  12. Nutmeg powder 1 tsp
  13. Chopped pistachios 2 tsp for garnishing

Instructions

  1. Chop all nuts (almond, pistachios, walnut) in medium size and dry roast to get that crunchy taste. Keep it aside to cool. Dry roast sesame seeds, sunflower seeds and flaxseed and let it cool.
  2. Remove seeds from the dates and finely chop them and keep aside.
  3. In a heavy bottomed pan heat ghee and add cardamon powder. Stir quickly and add dates and all other ingredients together. Stir for 2 mins and mix everything well.
  4. Switch off the gas and let the mixture cool until it comes to room temperature and easy to bind.
  5. Spread chopped pistachios on a tray and make long rolls from the above mixture. Wrap it in foil paper and Refrigerate it for 2 hours. After 2 hours slice the roll.
