Ingredients to make Classic Cookies and Cream Icecream

  • 1.5 litre vanilla ice cream
  • 1.5 litre chocolate ice cream
  • Approx.20-30 Oreo cookies (or any other cookies of your choice)
  • 250 ml Heavy whipping cream

How to make Classic Cookies and Cream Icecream

  1. Defrost the ice creams at room temperature for about 15 mins so that they become soft and workable .
  2. Put the Oreos in a large plastic bag or zip lock bag and with the help of a rolling pin, crush them till coarse. You can also do this job in a food processor.
  3. Line up the round baking tin of your choice with aluminium foil making sure to leave excess foil at the edges to help pull out the cake without making a mess . You can even use a spring form pan .
  4. Spread out the entire vanilla ice cream as the bottom most layer .
  5. Spread out half of the cookie mix next .
  6. Let this sit in the freezer for half an hour .
  7. Bring it out and apply the layer of chocolate ice cream .
  8. Spread out till even and let this be in the freezer for 2 hours (minimum) .
  9. While the cake is setting, prepare the whipped cream.
  10. Beat the heavy cream for 8-12 minutes till stiff peaks are obtained .
  11. Let this set in the fridge till ready to use .
  12. Pull out the cake by gently lifting it with the help of the extra foil at the edges .
  13. Decorate the top with lots of whipped cream and some cookie mixture too .
  14. Serve immediately .

My Tip:

This ice cream can be made with all flavours . So feel free to use anything you enjoy . I chose this because I wanted to show a classic combination . The biscuit or cookie layer at the bottom ; as is always done while preparing an ice cream cake is against my rules . Mainly because after hours of sitting in the fridge , the biscuit layer becomes too hard and feels horrible against the soft texture of the ice creams . So my method will give you a crisp biscuit crunch in between lumps of ice cream . This way , even the biscuit texture is enjoyed and it gives a nice effect to the entire cake .
