Ingredients to make Phirni

  • 4 cups Milk
  • 12 cup basmati rice
  • 1 1/2 cup sugar
  • 1/2 tsp green cardamom powder
  • 2 drops rose water concentrate
  • 15-20 almonds
  • Saffron a few strands
  • 1 Apple chopped
  • 25-30 grapes

How to make Phirni

  1. Clean rice, wash and soak for 10 min in 3 tbsp water.Then make a fine paste.
  2. Dissolve saffron it in 1 tbsp of warm milk.
  3. Slice almonds into slivers.
  4. Boil the remaining milk in heavy pan add rice paste and keep stirring constantly to prevent lumps. when the mixture turns thick and is reduced to custard consistency add sugar. Stir for more 2 min.Add almonds and rose water and remove from heat.
  5. Cool it to the room temperature and keep in the freezer for 5 minutes.
  6. Now stir it once again and add chopped apples and grapes.
  7. Refrigerate for 3 hrs and serve chilled.
My Tip: Keep stirring to prevent the lumps
