ABOUT Mawa Gulab Jamun With Kesar Syrup RECIPE

Ingredients Serving: 6

  1. 200 gm Mawa (khoya)
  2. 100 gm grated Paneer (cottage cheese)
  3. 3 1/2 tbsp all purpose flour
  4. 2 tbsp very thin semolina
  5. 1 tsp milk powder
  6. 1 tbsp warm water or milk as required
  7. 1/4 tsp baking powder
  8. 1/4 tsp Cardamom Powder
  9. Oil for Deep frying
  10. For the kesar sugar syrup -
  11. 250 gm sugar
  12. 1 1/4 cup water
  13. 1 drop lemon juice
  14. 1 tsp kesar strands or essence (I prefer here kesar strands )

Instructions

  1. Take the bowl add mawa, mash it very nicely, there should be no lumps.
  2. Then add grated paneer , semolina, all purpose flour, milk powder, baking powder, and cardamom powder to the mashed mava mix well all together, there should be no lumps in both mawa & paneer.
  3. Now mix well, add milk and gather together to form a nice dough. Do not knead.
  4. Mix just gently, cover the dough and keep aside for 20 to 25 mins.
  5. Now make small balls and keep aside.
  6. To prepare kesar Sugar syrup -
  7. Take a pan heat the sugar and water till it becomes sticky, switch off the flame before the syrup reaches a one thread consistency.
  8. Add a drop of lemon juice, kesar strands and stir. Keep aside
  9. While the syrup is cooking, heat oil on medium flame, again lower flame and wait for a minute.
  10. Now the gently place the gulab jamuns in the heated oil
  11. They start to have tiny golden spots, keep on stirring gulab jamun in oil so that they are evenly browned.
  12. Remove gulab jamun on kitchen tissue or paper to remove excess oil.
  13. Now add gulab jamun in hot sugar syrup
  14. Now serve gulab jamun warm or at room temperature also we can serve cold
  15. Garnish with chopped almonds
