Almond and Jaggery Loaf

Ingredients to make Almond and Jaggery Loaf

  • 1 cup whole wheat flour
  • 3/4 cup jaggery powder
  • 1/4 cup olive oil
  • 1/4 cup almond milk
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 3/4 cup almond flakes

How to make Almond and Jaggery Loaf

  1. Preheat the oven to 180 degrees C. Grease a loaf tin or place a sheet of baking paper over it.
  2. In a medium bowl, sift the flour, baking powder and cinnamon. Keep aside.
  3. In another bowl, beat the jaggery powder and oil until light and fluffy.
  4. Add one egg in at a time and beat well.
  5. Add the vanilla and almond extract.
  6. Fold the dry ingredients into the wet ingredients. Stir in 1/2 cup of the almond flakes.
  7. Transfer the batter into the loaf tin. Top with the remaining almond flakes.
  8. Bake for about 40 minutes or until a toothpick inserted into the centre comes out clean. Serve warm.
