ABOUT Chanar Jilipi RECIPE

Chanar Jilipi is a famous sweet of Kolkatta. Chanar Jilipi is deep fried Cottage cheese swirl dipped in sugar syrup.

Ingredients Serving: 5

  1. Full cream milk 1 1/2 litres
  2. Lemon juice 1 1/2 tablespoon
  3. Refined flour 1 tablespoon
  4. Baking powder 1/2 teaspoon
  5. 1 pinch of salt
  6. 1/2 litre of ghee/Refined oil
  7. Sugar 2 cups
  8. Water 3 Cups

Instructions

  1. Add lemon juice while the milk is boiling. Once the milk curdles up, drain the content in a clean muslin cloth. Tie it well and hang it from somewhere for the water to drain away completely.
  2. Transfer the cottage cheese on to your desired kneading space. Add refined flour, baking powder and a pinch of salt. Knead it well until all the mixture turns into a smooth dough. Refrigerate the mixture for good 20 minutes.
  3. Start shaping the jalebis. Take out small portions of the dough, roll out long ropes out of the balls and swirl them up in the form of jalebis. Deep fry them in batches.
  4. In the meantime, prepare the sugar syrup. In a heavy bottomed pan, add sugar and water. Boil until you get the desired consistency. Remember, it should not be very thick either very thin. Once done, switch off the oven, soak in the fried Cottage cheese jalebis or jilipis for a good 2 hrs.
  5. Heat in a microwave and serve hot
