ABOUT Kulfi RECIPE

Kulfi is a traditional Indian ice cream prepared with condensed sweetened milk and various flavourings such as Kesar Pista, Malai, Rose or fruity flavours. Here is the recipe of a simple kulfi

Ingredients Serving: 6

  1. Milk-1 litre
  2. Sugar- 1 cup
  3. Almonds and pistachios 1/4 cup (blanched and sliced)
  4. Saffron- 5 strands
  5. Almonds paste- from 1/2 cup almonds ( to thicken the milk and for taste)
  6. Elachi- 3 (powdered)

Instructions

  1. Boil milk in a thick bottomed pan and keep stirring
  2. Now add almond paste and stir for 10 minutes.
  3. Now add sugar, saffron soaked milk, elachi powder and chopped nuts and keep stirring till it reduces to half the quantity
  4. Switch off the flame and let it cool for 20 minutes.
  5. Take metal kulfi moulds and fill completely and close with lid.(a stick can be inserted just before eating or when half frozen)
  6. Let it chill for 7 to 8 hours in the highest cooling temperature available in your freezer.
  7. Enjoy your chilled kulfi
