Ghiya Burfi/Bottle Gourd Fudge

Ingredients to make Ghiya Burfi/Bottle Gourd Fudge

  • One long fresh bottle gourd / ghiya 1Kg
  • ghee 1/4cup
  • sugar 1 -1/2 cups( 300gms)
  • Khoya 250 gms
  • Chopped nuts 1/2 cup ( cashew,almond)
  • cardamom powder 1/2 tsp

How to make Ghiya Burfi/Bottle Gourd Fudge

  1. Grate bottle gourd and squeeze out water completely
  2. In a nonstick wok add ghee and saute for 5-6minutes
  3. Cover it with a lid so that it becomes tender. Stir in between after 2-3 minutes. It takes 8-10 minutes to cook
  4. Open the lid then add sugar. cook till the moisture goes away
  5. When the water dried up then add khoya, chopped nuts and stir well on low flame till khoya melts.
  6. Transfer burfi to a greased plate and smoothen the surface. Let it cool
  7. Cut slices with a knife or a pizza cutter. Serve

My Tip:

Squeeze out water from grated ghiya completely
