Instant Ginger Pickle

Ingredients to make Instant Ginger Pickle

  • Ginger grated - 100 gms
  • Mustard seeds - 1/4 Tsp
  • Fenugreek seeds - 1/4 tsp (dry roasted & powdered )
  • Asafoetida - 1/4 tsp
  • Red chilly powder - 1/2 tsp ( I used Kashmiri chilly powder and a pinch of regular powder)
  • Lemon juice - 1 (from 1 lime)
  • Oil - 2 tbsp
  • Salt to taste

How to make Instant Ginger Pickle

  1. Peel the ginger. Wash and grate
  2. Dry roast the methi seeds till you get nice aroma & it crackles.Later, powder it.
  3. Now in a kadai put oil. Add mustard seeds & after it splutters put Asafoetida & fenugreek seeds powder. Mix well.
  4. Add grated ginger. Add salt & red chilly powder.
  5. Keep stirring till all the moisture goes away & it becomes a non- sticky paste
  6. After all the ingredients are mixed, turn off the gas and add lemon juice.
  7. When cool store in airtight bottles & refrigerate it.
My Tip: Adjust salt and spices according to your taste
