Royal Hyderabadi Zarda

Ingredients to make Royal Hyderabadi Zarda

  • Basmati rice or any long grain rice 2 cups
  • Sugar 1/2 cup
  • Ghee 4 tbsp
  • Cardamom pods 5
  • Cloves 6 to 7
  • Cinnamon sticks 5
  • Saffron strands 3 or 4
  • Food colour of your choice
  • For decoration and serving -
  • Rasgullas as per choice
  • Gulab jamuns as per choice
  • Boiled eggs as per liking
  • Khoya/mawa as needed
  • Mixed dry fruits of choice 3/4 th cup slivered

How to make Royal Hyderabadi Zarda

  1. Soak the rice for 30 mins.
  2. Cook until done, keep it aside. See to it that the grains remain intact and not broken
  3. In a non stick pot, heat the ghee, add the whole masalas. Saute them for a minute. Add the rice and the sugar now. Cover and let it cook until the sugar mixes and gives it a shiny gloss.
  4. If using colour, then divide the rice as per the different colours, and then mix all after done.
  5. If not using colour, just add a few strands of saffron.
  6. Garnish with dry fruits, boiled eggs, rasgullas and gulab jamuns.
  7. Serve it hot or cold. Tastes equally yummy.
